A simple, quick, and delicious dish like this is perfect on busy days when you don’t have much time to prepare food. This is the easy one-pan creamy garlic mushroom chicken recipe by Sip and Feast that will surely be a hit in any household. Slice the chicken into 3-inch-long pieces. Pat the chicken dry with a paper towel, then season well with salt and pepper on both sides. Coat the chicken with flour on all sides and shake off the excess.
Place a large skillet over medium heat and pour 1 to 2 tablespoons of olive oil. Once hot, add the chicken pieces. Make sure to not overcrowd the pan. Sear the chicken for 3 minutes for each side or until cooked through. Once done, place it on a plate. Do the same process with the other batches, then set aside.
Add the mushrooms to the pan and cook for about 5 to 7 minutes until browned. Next, add the garlic and cook for 2 minutes more.
Season the mushrooms with some salt and pepper. Next, add the wine and chicken stock, then turn the heat to high. Scrape all of the brown bits with a wooden spoon. Cook until the sauce reduces to half for about 3 to 5 minutes, then lower the heat to medium.
Add the chicken and spinach into the pan, then cover and cook for about 2 to 3 minutes to wilt the spinach and warm the chicken through.
If the sauce is too thin, add half of the optional cornstarch mixture to the pan and cook over medium-high heat until it has a thick consistency for about 2 minutes. If it’s still too thin, add the remaining slurry. Once done, turn off the heat.
Taste the sauce and adjust seasonings if needed. Once satisfied, mix in the cued butter and stir until melted. You can serve it with crusty bread to mop up the sauce. Enjoy!
