Step 1
Place a large pan on a stove over medium heat, then add in 2 tablespoons of oil, and heat it. In a large mixing bowl, add the chicken breasts, then season them with 1 tablespoon of spice mix and salt, and rub them until both sides are completely covered.
Step 2
Put the seasoned chicken in the hot pan, then cook them for about 1 to 2 minutes per side or until nice and brown, and remove them from the pan before setting them aside. In the same pan, add the remaining 1 tablespoon of spice mix followed by the garlic and rice, and give them a good stir.
Step 3
Toast them for 1 minute or until fragrant, then pour in the tomato basil sauce along with the vegetable broth, and stir everything together until combined. Bring it to a simmer, then reduce the heat to low, and put the cooked chicken back into the pan.
Step 4
Cover the pan with the lid, then let it continue to simmer for another 15 minutes until cooked through, and then turn off the heat. Top it with parmesan cheese and fresh basil, then serve immediately, and enjoy!
