Personally, my all-time favorite dessert is a pineapple upside-down cake. I just love the combination of fruity flavor with soft and fluffy cake. It is also very easy and quick to prepare, plus, you can share it with family or friends, too. Pineapple skillet

Step 1
Place a skillet on a stove over medium heat, then melt the butter and sugar together, and bring it to a simmer for about 4 to5 minutes. Place the fresh pineapple rings in the skillet as well as the cherries. Let it simmer over low heat while preparing the rest of the ingredients. In a large mixing bowl, add the shortening, brown sugar, and sugar, then beat them together, and incorporate the eggs along the way. Beat them together until well combined, then incorporate the milk, vanilla, and self-rising flour, and continue to beat them for about 2 minutes or until smooth and incorporated.

Step 2
Remove the pineapple skillet from the stove, then spray the sides with cooking spray, and pour the cake batter on top spreading it nice and even. You can spray the top or add melted butter, then put it in the preheated oven at 350 degrees, and let it bake for about 25 to 35 minutes or until a toothpick inserted at the center comes out clean. Let the cake cool for about 15 minutes before placing the cake on top of another skillet upside down, then serve, and enjoy!
