Ingredients for Old-Fashioned Caramel Cake:

Cake

  • 3 cups of cake flour, spooned and leveled
  • 2 tsp of baking powder
  • ½ tsp of baking soda
  • ½ tsp of table salt
  • ½ cup of unsalted butter, softened
  • ½ cup of canola or vegetable oil
  • 2 cups of white sugar
  • 4 extra-large eggs, at room temperature
  • 1 cup of full-fat buttermilk, at room temperature
  • 1 tsp of pure vanilla extract

Frosting

  • 2 cups of light brown sugar, packed
  • 1 cup of unsalted butter, cut into cubes
  • ¼ tsp of table salt
  • ⅔ cup of evaporated milk
  • 2 cups of powdered sugar, sifted or whisked
  • 1 tsp of pure vanilla extract

How to Make Old-Fashioned Caramel Cake:

Step 1

Spray two 9-inch round cake pans with baking spray and flour and set them aside, then in a medium bowl, add the cake flour, baking powder, baking soda, and salt, and whisk them until incorporated.

Step 2

In a separate bowl, add the butter and oil, then beat them over medium speed until well combined, add the sugar, and continue mixing until fluffy. Add the eggs one at a time making sure to beat well in between each addition, add the vanilla extract, and mix until well combined.

Step 3

Mix the flour mixture with the sugar mixture alternating with buttermilk, then divide the batter evenly into the prepared cake pans and tap them on the counter a few times to remove air bubbles.

Step 4

Place them in the preheated oven, then let them bake for about 30 to 35 minutes or until a toothpick inserted at the center comes out clean, and then remove them from the oven.

Step 5

Let them cool in the pan for 15 minutes, then transfer them to a wire rack, and allow them to cool completely. Meanwhile, prepare the frosting, and place a large pot or medium saucepan on a stove over medium heat.

Step 6

Add the brown sugar, cubed butter, salt, and evaporated milk, and stir them until dissolved and completely melted. Bring the mixture to a boil, then once boiling, allow it to cook for about 5 minutes, and make sure to stir it constantly.

Step 7

Remove the caramel from the heat, then pour it into a large heatproof bowl, and let it sit for about 5 to 10 minutes. Add the powdered sugar and vanilla extract, then whip them over medium speed until combined.

Step 8

Increase the speed to high, and mix them until completely cooled and spreadable consistency. If the frosting is still warm, let it cool for 30 minutes to 1 hour, then use it to layer and frost the cake, and then serve. Enjoy!
