This recipe by Food Metrica is the easiest and simplest cookie ever! It’s made of 100 percent oatmeal, and requires no egg, flour, or butter. This is healthier subsitute and alternative for those who are not a fan of super sweet cookies. You can also tweak this recipe according to your preference by adding in your favorite dried fruits or nuts.
Step 1
If you don’t have oat flour available, you can simply use a food processor to grind rolled oats into powder. Then, in a large mixing bowl, add in the oat flour, rolled oats, baking powder, sugar and salt. Give them a good mix until they are well combined. Pour in the milk, add vanilla extract, and coconut oil, mix them together until fulyl combined. Mix in the chopped nuts, dry fruits or chocolate chips. The dough will become wet and sticky, then the coconut oil will harden and will turn the dough into a crumb-like texture.

Step 2
Scoop a small portion of the dough, then roll it between your palms and shape it into a round ball with about 1 inch diameter. Place them into a baking sheet lined with parchment paper, then press the dough balls with your palms to flatten it and make a circle of around 2.5 inch diameter. Do this with the remaining dough and flatten all the cookies in similar sizes. You will get about 13 to 14 pieces of cookies form this mixture. Bake the cookies in a preheated oven at 350°F (180°C) for about 18 to 22 minutes. Allow the cookeis to cool for 5 to 10 minutes on the baking pan, then transfer them on a cooling rack to cool completely. You can store them in an airtight container.
