Ingredients:

  • ½ cup of unsalted butter, room temperature
  • ½ cup of sugar
  • 2 eggs, room temperature
  • 1½ cups of all-purpose flour
  • 1/8 tsp of salt
  • ½ cup of unsweetened cocoa powder
  • 1¼ tsp of baking powder
  • Nutella
  • 3 tbsp of granulated white sugar
  • 1/3 cup of powdered sugar

Directions:

Step 1

Mix the softened butter and sugar in a large mixing bowl using a spatula until it becomes creamy. Incorporate the eggs one at a time, then mix until well combined. Place a sieve on top of the bowl, then add in the all-purpose flour, salt, cocoa, and baking powder, whisk them as they sift into the mixture. Once done sifting, switch to a spatula and mix just until well combined making sure to not overmix. Cover the bowl with plastic wrap and refrigerate for about 60 to 90 minutes. While you’re waiting, scoop out 15 large teaspoons of Nutella onto a parchment paper-lined sheet pan, then freeze them for about an hour or until completely frozen.

Step 2

Scoop the chilled cookie dough using a 1.5-inch ice cream scooper. Flatten the cookie ball in your palm, then place a frozen Nutella scoop in the middle. Fold the edges of the dough upward until the frozen Nutella is covered and the cookie dough becomes a full round ball. Repeat the process for the rest of the dough. Roll each cookie ball into granulated sugar, then coat it with powdered sugar. Place the coated cookie balls onto a lined baking sheet making sure they are about 2 inches apart from each other. Make a second coating of powdered sugar right before baking. Bake them in a preheated fan oven at 350°F for about 10 minutes. Let it cool down before serving.
