Ingredients for Peach Custard Pie:

  • 1 pie crust, store-bought or homemade
  • ripe peaches, peeled and sliced into eighths

Custard

  • 4 large eggs
  • 1 cup of white sugar
  • 1 tbsp of brown sugar
  • 1 tbsp of all-purpose flour
  • 2 tbsp of cornmeal
  • ½ tsp of salt
  • 1 tsp of vanilla extract
  • 1 tbsp of apple cider vinegar
  • ¼ cup of whole milk
  • ½ cup of melted butter

Step 1

Prepare the crust in a pie pan, then place it in the refrigerator, and let it chill for at least 20 minutes. Preheat your oven to 400°F, then line the chilled pie crust with parchment paper, and fill it with pie weights.

Step 2

Place it in the preheated oven and let it bake for about 15 minutes, then take it out of the oven, and remove the parchment paper and weights. Let it cool to room temperature for about 20 minutes, then reduce the temperature of the oven to 3506F, and prepare the custard.

Step 3

In a large bowl, add the eggs, white sugar, and brown sugar, then whisk them vigorously for about 2 minutes until the sugar has dissolved, and then add the flour, cornmeal, salt, vanilla, vinegar, milk, and melted butter.

Step 4

Continue to whisk them vigorously for about 2 minutes or until smooth and emulsified, then set it aside. Arrange the peach slices on the bottom of the prebaked crust as shown in the video, then quickly whisk the batter again, and slowly ladle it into the crust.

Step 5

Place the pie in the preheated oven, then allow it to bake for about 50 to 60 minutes or until the top is browned and a toothpick or knife inserted at the center comes out clean. Let it cool completely, then chill it in the fridge or serve immediately, and enjoy!
