Ingredients for Hummingbird Cake:

  • 2¼ cups of flour
  • ½ cup of cornstarch
  • 1½ tsp of baking powder
  • ½ tsp of baking soda
  • ½ tsp of salt
  • 1½ tsp of ground cinnamon
  • 1 cup of mashed bananas
  • 1 cup of light brown sugar
  • ½ cup of white granulated sugar
  • 3 large eggs, at room temperature
  • 1 cup of unflavored vegetable oil
  • 1 cup of canned crushed pineapple, juice included
  • 2 tsp of vanilla extract/essence
  • 1½ cups of pecans, roughly chopped
  • Cream cheese frosting, homemade or store-bought

How to Make Hummingbird Cake:

Step 1

Preheat your oven to 350°F, then grease two 8×3-inch cake pans with nonstick cooking spray, and line them with parchment paper at the bottom. In a large mixing bowl, sift together the flour, cornstarch, baking powder, baking soda, salt, and ground cinnamon, then whisk them until uniform, and set the mixture aside.

Step 2

In a separate large bowl, mash the bananas until smooth, then add the light brown sugar, white granulated sugar, eggs, vegetable oil, crushed pineapple, and vanilla extract, and whisk them until thoroughly combined making sure not to overmix.

Step 3

Add the chopped pecans, then fold them until evenly distributed, and divide the batter evenly into the prepared cake pans. Make sure to level the tops of the cake batter, then tap them on the counter to remove any air bubbles, and then place them in the preheated oven.

Step 4

Allow them to bake for about 38 to 40 minutes or until a toothpick inserted at the center comes out clean with a few moist crumbs on it, then let them cool for about 20 minutes, and then unmold the cake from the pan. Transfer them to a wire rack to cool completely, then assemble the cake as demonstrated in the video, and then serve. Enjoy!
