Easy No-Bake Mocha Chip Icebox Cake Recipe

Icebox cake is one of the best desserts ever, they are super easy and convenient to make, especially when you’re craving a yummy cake but don’t have an oven. This is a great treat to serve at parties or even on an ordinary day, and I bet that everyone will love this!

Ingredients for Mocha Chip Icebox Cake:

• 1/3 cup of white sugar
• 1 tsp of instant coffee powder
• 1 tbsp of unsweetened cocoa powder
• 1 tsp of pure vanilla extract
• 3 tbsp of coffee liqueur
• 2 cups of heavy cream, cold
• 12 oz of mascarpone cheese or cream cheese
• 4 (8 oz) packages of chocolate chip cookies

How to Make Mocha Chip Icebox Cake:

Step 1

In a mixing bowl, add the sugar, coffee powder, cocoa powder, vanilla extract, coffee liqueur, and cold heavy cream, then beat them with a handheld mixer until thickened and before soft peaks form.

Step 2

Add the mascarpone cheese, then continue to beat just until stiff peaks form, then place it in the refrigerator, and let it chill until ready to use. Line the bottom of a 9-inch springform pan with parchment paper.

Step 3

Place 8 cookies in the bottom of the pan, then fill in the gaps with small pieces of cookies. Top it with a quarter of the mocha cream mixture spreading it evenly to the sides, and repeat 3 more times with the remaining cookies and cream.

Step 4

Finish the layer with cookies on the top, then wrap it with plastic, and place it in the refrigerator to chill for about 12 to 24 hours. Run a thin knife on the side and release the cake, then slice, and serve. Enjoy!
