Ingredients:

  • 1 package of graham crackers
  • 5 tbsp butter (melted)
  • 1 tbsp sugar
  • 2 8 oz packages of cream cheese (room temperature)
  • 7 oz sweetened condensed milk
  • 3 tsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1/4 tsp lemon zest

For the topping:

  • 1/4 cup fresh strawberries (chopped)
  • 1/4 cup strawberry preserves (or jam)

Directions:

Step 1

Put cupcake liners into a cupcake tray and spray them with a bit of nonstick cooking spray. Next, put the graham crackers in a food processor and crushed them. Transfer the crushed grahams into a bowl and add some granulated sugar and melted butter. Mix it all together. After this, take a tablespoon amount and put it in the bottom of the cupcake liners. Take a measuring cup and pack the crust down so it’s nice and intact. Place them in the freezer so they will set, then work on the filling next.

Step 2

In a stand mixer, add 2 8 oz packages of cream cheese. Beat them until they are nice and fluffy. Add 7 oz sweetened condensed milk, 1 tsp of vanilla extract, 3 tsp fresh lemon juice, and 1/4 tsp lemon zest. Mix them well. Next, transfer the filling to a piping bag. Squeeze this to the chilled cupcake liners evenly. After filling out all the cupcake liners, put them in the refrigerator overnight. Once it’s refrigerated overnight, take off the cupcake liners and put the cheesecakes on any plate that you want. For the topping, place some chop-up strawberries in a bowl and add some strawberry preserves. Give it a good mix. Put the mixture on top of the cheesecakes along with a fresh strawberry wedge.
