Cheesecake Filling
Step 1
Place a small saucepan on a stove over medium heat, then add the peaches, water, sweeteners, and cinnamon, give them a good mix, and bring the mixture to a simmer. Let it cook until the peaches are tender, then remove the saucepan from heat, and set it aside for alter.
Step 2
Place a clean saucepan on a stove over medium heat, then add the pecans, butter, sweetener, and salt, and mix them until combined. Cook them while stirring constantly for about 4 to 5 minutes or until lightly toasted, then remove the saucepan from the heat, and set it aside to cool completely.
Step 3
Beat the cream cheese in a large bowl until very smooth, then add the sweetener and vanilla extract, and continue to beat until well combined. In a separate bowl, beat the whipping cream until stiff peaks form, then transfer it to the cream cheese mixture, and fold until uniform.
Step 4
Add about 1 tablespoon each of pecan crumble to the bottom of 6 small dessert glasses, then add the cheesecake filling, and top it with peach sauce. Sprinkle some more pecan crumble on top, then serve immediately or chill until ready to serve, and enjoy!
