Ingredients:

  • 28 oz digestive biscuits (tea biscuits)
  • 1 cup nuts, toasted and slightly chopped

Chocolate Syrup:

  • 1 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 cup water
  • 2/3 cup butter
  • 1 tsp vanilla extract

Chocolate Ganache:

  • 1/2 cup whipping cream (35% fat)
  • 4 oz bittersweet chocolate, chopped

Directions:

Step 1

To start, break the digestive biscuits into small pieces and put them in a large mixing bowl. Set aside. Next, in a pan over medium-high heat, add 1 cup of your preferred nuts and cook them for five minutes, stirring frequently. After this, add the toasted nuts to the bowl of digestive biscuits. Next, in a small saucepan, add 1 cup of sugar and 1/2 cup of unsweetened cocoa powder. Whisk them well, then gradually pour 1 cup of water. Add 2/3 cup of butter, then place the saucepan over the stove. Boil it for seven to eight minutes at medium heat while stirring frequently. Remove it from the heat, stir in 1 tsp vanilla extract, and set it aside to cool slightly for about ten to fifteen minutes.

Step 2

Once the chocolate syrup cooled off slightly, pour it over the digestive biscuits and nuts, and stir to combine well. Transfer the mixture to a non-stick cake ware and use the back of the spoon to press the mixture. Cover it and refrigerate for 30 minutes to one hour. While waiting, make the chocolate ganache. In a small saucepan, add 1/2 cup whipping cream and heat it until it just begins to boil. After this, combined it with 4 oz chopped bittersweet chocolate. Let it sit for a minute, then stir until smooth. Pour this all over the top of the cake, spreading evenly, then put it back on the refrigerator and chill for at least three to four hours.
