Talking about cheesecakes, this recipe from Everyday Food on Youtube is a super easy and quick recipe that you can pull off in a short period because it doesn’t require an oven. Ingredients:

  • 2 packages (20 sheets) of graham crackers
  • 11 tbsp (1 3/8 sticks) unsalted butter (melted)
  • 2 tbsp sugar
  • 2, 8 oz packages of cream cheese (room temperature)
  • 1 14 oz can (1 1/4 cups) sweetened condensed milk
  • 1/4 cup fresh lemon juice
  • 1 tsp vanilla extract

Directions:

Step 1

In a bowl, add 2 packages of crushed graham crackers followed by 2 tbsp of sugar and 11 tbsp of unsalted butter. Mix them well. This is for the cheesecake’s crust. Normally, you would have to bake this for a bit, but for this recipe, you don’t have to. After mixing, pour it into a nine-inch springform pan. Spread the mixture in the bottom and about one inch to two inches up the sides of the pan. Chill the pan in the refrigerator for about 1o minutes. Moving on with the filling, add 2 blocks of eight oz each cream cheese in a bowl followed by 1 can of 14 oz sweetened condensed milk. Beat them together nicely. Add a 1/4 cup of lemon juice and 1 tsp of vanilla extract. Beat them in high.

Step 2

Ge the crust out of the refrigerator. Next, scrape the cream cheese mixture into the prepared crust. Spread it across evenly and smoothly. After this, place the cheesecake in the refrigerator and let it chill for about two and a half to three hours. After it is chilled, get it out of the refrigerator and remove it from the pan. If it slightly sticks to the pan, just run a knife around the edges lightly so it doesn’t break. Once it’s out, take a spatula and run it underneath the crust to loosen it. You can now slice the cheesecake easily for serving.
