- ½ cup of sugar
- 2 tbsp of water
- 1½ cups of milk
- 1 tsp of butter
- 3 eggs
- ½ tsp of vanilla extract
How to Make Butterscotch Pudding:
Step 1
Place a pan on a stove over medium heat, then add the sugar and water, and let them cook without stirring until caramelized. Add the milk, then mix them until well combined, and let it boil for about 5 minutes. Add the butter, then give it a good stir until completely melted, turn off the heat, and let the mixture cool completely.
Step 2
Meanwhile, in a mixing bowl, beat the eggs, then add the vanilla extract, and keep whisking to combine. Pour in the butterscotch mixture, then whisk to combine, and pour it into a strainer over a 5-inch baking dish greased with oil.
Step 3
Boil some water, then put a steaming rack inside, and place the baking dish on top of the rack. Let the pudding steam for about 25 to 30 minutes, then cool it down completely, and transfer it to the refrigerator to chill for at least 2 hours. Serve and enjoy!
