Ingredients:

Pudding Filling

  • 3 cups whole milk
  • ¾ cup sugar
  • ½ cup flour
  • 3 egg yolks, lightly whisked
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 2 tbsp butter
  • 2 medium bananas, sliced into ¼-inch thick rounds
  • 1 cup whipped cream

Vanilla Cookie Crust

  • ½ cup butter, melted
  • 2 cups vanilla cookie crumbs

Directions:

Step 1

Place a medium-sized saucepan on a stove over medium heat, then add the flour and sugar, and slowly pour in the milk while whisking continuously until dissolved and incorporated. After 5 minutes and the mixture has thickened, scoop some of the hot milk mixtures into the egg yolks, then give them a good whisk, and pour it all back into the hot milk. Continue to whisk and let it cook for 4 to 5 more minutes until the consistency becomes very thick, then remove the saucepan from the heat, and add the vanilla, salt, and butter. Whisk them together until well combined, then set them aside, and let them cool down while preparing the crust. Grease a 9-inch cake or pie pan generously with butter, then line it with 2 to 3 layers of cling wrap, and leave some excess hanging around the sides.

Step 2

In a large mixing bowl, add the cookie crumbs and melted butter, then mix them together until the texture becomes similar to wet sand, and transfer it all to the prepared pan pressing it to the bottom and sides nicely and evenly. Place the crust in the fridge and let it set, then once ready, remove the crust from the fridge, and place 2 layers of freshly sliced banana all over the bottom until completely covered. Next, pour the pudding filling on top of the banana layer, then smoothen the top before covering it, and put it back in the fridge to set for at least 4 to 5 hours or until firm. Pipe some whipped cream over the pie and garnish with more banana slices, then serve, and enjoy!
