Step 1: Crust
Break the Oreo cookies into smaller pieces, then add them to a food processor, and pulse them until fine crumbs. Add the melted butter, then continue to blend them until combined, and transfer them to an 8-inch springform pan lined with parchment paper at the bottom. Press the crumbs down the bottom and a little bit to the sides smoothly, then place it in the fridge, and allow it to chill for at least 1 hour until completely set.
Step 2: Cheesecake Filling
In a large mixing bowl, add the cream cheese and powdered sugar, then gently fold and mix them together until smooth and creamy, add the heavy cream, and beat them over low to medium speed until soft peak forms. Add the Baileys Irish Cream, then beat it again until thick and creamy, and pour the filling into the chilled crust spreading it smoothly and evenly. Put it back in the fridge to chill for at least 6 hours up to overnight until set.

Step 3: Chocolate Ganache
Break the chocolate into smaller pieces, then place them in a heat-proof bowl, and set them aside. Place a saucepan on a stove over low to medium heat, then add the heavy cream and Baileys Irish Cream, and allow them to gently boil before adding in the chopped chocolate. Let them melt for about 1 minute, then gently stir them all together until fully combined, and turn off the heat. Allow them to cool down for at least 30 minutes.
Step 4: Assembly
Pour the chocolate ganache on top of the chilled cheesecake, then spread it out smoothly and evenly, and set it aside. In a mixing bowl, beat together the heavy cream and Baileys Irish Cream until soft peaks form, then transfer the mixture to a piping bag, and start piping it all over the top of the cheesecake decorating it however you want. Sprinkle some chocolate shavings, then serve, and enjoy!
