Ingredients for Naked Eggs Benedict:

Eggs

  • 2 tsp of melted butter
  • round or oval slices of deli ham
  • 2 large eggs
  • 1 pinch of salt
  • 1 pinch of cayenne pepper

Lemon Sauce

  • 1 lemon, juiced
  • 1 tbsp of water
  • Salt, to taste
  • 2 tbsp of cold unsalted butter, sliced
  • 1 pinch of cayenne pepper, to taste

Assemble

  • 1 English muffin, halved, toasted, and buttered
  • 1 tsp of freshly chopped chives, to garnish

How to Make Naked Eggs Benedict:

Step 1

Preheat your oven to 350°F, then grease two 5-ounce ramekins with melted butter, and place them on top of a baking sheet. Line each ramekin with two slices of ham, then crack an egg into a small bowl, and gently transfer it to the center of the ham on the ramekin, do the same for the other ham-lined ramekin.

Step 2

Season each egg with salt and cayenne to taste, then place them in the preheated oven, and bake them for about 20 to 25 minutes or until the whites are just barely set and the yolks are still soft and a little runny.

Step 3

Once the eggs are cooking for about 10 minutes prepare the sauce, place a small pan on a stove over medium heat, then add the lemon juice, water, and salt, and bring it to a simmer for about 1 to 2 minutes or until the liquid has reduced by about half.

Step 4

Turn your heat to the lowest setting, then add the butter slices, and stir them around until completely dissolved into the sauce. Season it with cayenne or hot sauce if desired, then turn off the heat, and keep it in a warm spot until needed.

Step 5

Prepare the English muffins, then carefully unmold and transfer the baked ham and eggs to the muffin halves, and drizzle them with the prepared warm sauce. Garnish them with freshly chopped chives and serve immediately. Enjoy!
