Step 1
Place the pan on a stove over low heat, then heat up the vegetable oil, and add the Portobello mushrooms. Give them a good stir and let them cook until tender. Add the shimeji mushrooms, stir them all together and cook them for about 8 minutes. Next, season them with salt and pepper to taste and toss them together. Remove the pan from the heat. Place a saucepan or pot on the stove still over low heat, then melt the butter, and add in the flour. Stir them continuously and cook until they become smooth.

Step 2
Pour the heavy cream and half of the Gruyere cheese, give them a good stir and cook for about 1 to 2 minutes. Transfer about 1/3 of the heavy cream mixture to a 10 or 12 inches round baking dish, tilt the dish around to spread the mixture, and cover the whole bottom. Add half portion of the sliced red potatoes in a single layer, then top it with half of the portion of the cooked mushrooms. Pour over some of the remaining portions of the heavy cream mixture, then add the remaining portion of red potatoes for another layer, top with the remaining mushrooms, and cover them with the remaining heavy cream mixture. Sprinkle the remaining Gruyere cheese on top, then season with more pepper to taste. Pop it in a preheated oven at 380°F and bake for about an hour.
