I love cheese and it goes well with any pastry or dish, it can make any recipe instantly better than it already is, and mozzarella is one of my favorite types of cheese. I never knew that making cheese at home can be so easy and inexpensive until I found this recipe by In The Kitchen With Matt on YouTube! Now, I always make mozzarella at home, it tastes so good that even my family and friends were so impressed and they even wanted to give it a try themselves.

Ingredients:

  • ½ gallon of raw or pasteurized whole milk
  • 7 tbsp of white distilled vinegar

Optional

  • ¼ tsp of cheese, flaky, or kosher salt

Directions:

Step 1

Place a large pot on a stove over medium-low to medium heat, then pour the milk, and gently stir it around continuously until it reaches a temperature of 115°F or 46°C. Turn off the heat, then add the vinegar, and give it a good stir for about 30 seconds until well combined and starts to curdle. Cover it with the lid, then allow it to sit for about 15 to 20 minutes, and push the curd to the side of the pot. Transfer the curd into a large mixing bowl, then grab the curd, and gently squeeze it in your hands. Keep on repeating this process adding a bit of force more and more each time, you can also add salt at this point if you want, then place it in a microwave-safe bowl, and heat it on a high setting for about 30 seconds.

Step 2

Give the cheese a nice stir, then heat it up for 20 more seconds, and once it has reached a temperature of 160°F or 71°C, start stretching and folding the dough with a spoon switching to your hands once cool to the touch. Shape the cheese into a ball, then transfer it to a bowl filled with cool water, and let it sit for about 10 minutes. After the water bath, add more ice, then let the cheese chill, and then pat the cheese dry with a paper towel. Serve and enjoy!
