These easy morning glory muffins by The Sweetest Journey are not only delicious but also healthy! They are packed with carrots, apples, walnuts, and pineapples. These muffins are great for breakfast or snacks any time of the day. In some versions of this recipe, coconut, and raisins are added for additional flavor. You should definitely try these muffins at home.

What I love most about this recipe is that it’s super quick and easy to prepare. You can make them ahead and just grab one whenever you want to. They are moist, tender, and flavorful. In a medium mixing bowl, add the flour, baking soda, salt, and cinnamon. Whisk until well combined. Set it aside.
In a large mixing bowl, add the eggs, vanilla, oil, and applesauce. Mix until well combined. Add the grated carrot, apple, and pineapple and mix until well combined.
Add the flour mixture to the wet mixture and stir until just combined. Gently fold in the pecans or walnuts.
Line a muffin tin with paper liners. Fill each cup with the batter.
Place the muffin tin in a 350F preheated oven and bake for 25 to 30 minutes or until a toothpick comes out clean when inserted. Once done baking, let the muffins cool completely.
