Ingredients:

For the egg custard:

  • 4 eggs
  • 1/2 cup half-and-half (or heavy cream)
  • 1/4 cup grated parmesan
  • 1/4 tsp salt, or to taste
  • freshly ground black pepper

For the filling:

  • 1 cup frozen spinach (1/2 cup when thawed)
  • cooked bacon, sauteed onion, or feta cheese (recommended add-ins for more flavor)

For assembly:

  • 1 canned crescent roll dough
  • unsalted butter

Directions:

Step 1

Microwave 1 cup of frozen spinach on defrost setting, then strain excess water with a mesh sieve or colander. Next, crack four eggs and beat them until smooth, then add 1/2 cup of half-and-half, 1/4 cup grated parmesan, 1/4 tsp salt, and freshly ground black pepper. Mix well to combine. Preheat the oven to 365 degrees F and grease your muffin tin with unsalted butter. After this, open and place your crescent dough on parchment paper, then separate them into triangles.
