Ingredients:

For the batter:

  • 1 egg
  • 8 tablespoons of granulated sugar
  • 3.4 oz of oil
  • grated lemon zest
  • 5 oz of orange juice
  • 1 3/4 cup of flour
  • 4 teaspoons of baking powder

For the filling:

  • 1 egg
  • 5 2/3 tablespoons of granulated sugar
  • 5 oz of orange juice
  • 1 1/2 pastry cream powder

For the garnish:

  • apricot jam
  • coconut flakes
  • orange slices

Instructions:

Step 1:

In a bowl, add sugar, egg, oil, and lemon zest. Mix the ingredients, then pour the orange juice. Next, put the flour and whisk the mixture. Then add the baking powder and whisk again. Once done, pour into your molds.

Step 2:

Put in the oven at 356 degrees F for 20-25 minutes. Remove from the oven, spread some apricot jam on each side using a brush and sprinkle the coconut flakes on top.

Step 3:

Make the filling. In a small pot, add egg, granulated sugar, and lemon juice, and whisk all the ingredients. Next, add the pastry cream powder into the mixture and stir it. Then place the pot on the stove and cook on low heat. Stir the mixture continuously until the texture thickens. Once done with the filling, using a spoon, scoop the mixture and fill the cakes. After filling, slice the oranges into tiny pieces and place them on top of the fillings. That’s it.
