For the tart:

Add 1/3 cup of softened butter and 2 tablespoons of sweetener in a large bowl. Mix until well combined.
Add 1 large egg yolk and 1 teaspoon of vanilla extract. Stir until well incorporated.
Put 1 cup of whole-grain spelt flour into the mixture and combine well with the mixture until it has a crumbly texture. Place a sheet of plastic wrap on your work surface and transfer the dough. Cover it and chill in the fridge for about 30 minutes
After 30 minutes, remove from the fridge. Get a small portion and roll it into a ball. Press it into a 2.5-inch tart mold. Make sure to cover the sides well, then make holes at the bottom using the tines of a fork. Repeat with the remaining dough. Place it in the freezer for 10 minutes.
Place it in a 370F preheated oven and bake for about 20 minutes. Once done, let it cool for about 10 minutes, then remove from the mold.
Add 2 large egg yolks, 2 tablespoons of sweetener, and 2 tablespoons of cornstarch in a different bowl. Mix until smooth and set it aside.
In a pot, fill 3/4 cup of full-fat milk and 1/4 cup of whipping cream. Let it come to a simmer and remove it from the heat.
Slowly add the milk into the egg yolk mixture while mixing. Transfer it back to the pot and cook on low-medium heat. Continuously whisk until it becomes thick and smooth, then remove from heat.
Add 1 teaspoon of vanilla extract and mix well. Transfer to a bowl and cover with cling wrap. Let it cool completely for about 1 to 2 hours.
After it cooled, mix and transfer it to a piping bag. Fill each crust with the cream and top with your fruit slices. Glaze the top with honey and it’s ready to serve. Enjoy!
