Ingredients:

  • 2 pieces of banana, sliced into ¼ to ½ thick pieces
  • 2 eggs
  • 1/3 cup of sugar
  • 1 tbsp of oil
  • 1 tsp of vanilla extract
  • 1 cup of flour
  • 1 tsp of baking powder
  • ½ cup of milk
  • Oil, to grease the pan

Directions:

Step 1

Peel off the skin of both bananas, then slice them into about a quarter to half an inch thick, it doesn’t have to be precise, cutting them into smaller pieces just makes them easier to mash. Place the sliced bananas into a mixing bowl, then add 2 eggs, and mash the bananas. Give them a good mix until well combined, then add the sugar, oil, and vanilla extract. Mix them all together until incorporated and uniform before adding the flour, baking powder, and milk. Mix them well until combined and it turns into a batter.

Step 2

Place a pan on a stove over low heat, then grease the pan with oil or butter, and wipe off the excess. Scoop about 1 tablespoon of batter and pour it into the pan making a small round shape. Let them cook for about 1 minute over low heat, then flip, and cook the other side for 30 seconds to another 1 minute. Top it with your favorite syrup or with butter, then serve, and enjoy!
