Ingredients:

Cake batter

  • 3 cups all-purpose flour
  • 2½ cups sugar
  • 1 tsp baking powder
  • 6 eggs
  • 3 sticks butter
  • 8-ounce cream cheese
  • 2 tsp vanilla extract
  • 1 tsp lemon extract
  • 1 tsp almond extract
  • 1 cup heavy whipping cream

Salted caramel glaze

  • 2 cups granulated sugar
  • 1½ sticks butter
  • 1½ cups evaporated milk
  • 1½ tsp vanilla extract
  • Salt, to taste, if needed

Toasted pecan

  • ½ cup chopped pecans
  • 1 tbsp unsalted butter

Directions:

Step 1

In a stand mixer, cream the butter, then add the cream cheese, and continue to mix them together until incorporated. Gradually add the sugar while continuously mixing, then incorporate the eggs one at a time mixing sure to mix well in between each addition, stop mixing to add the vanilla and almond extract, and then continue to mix them until well combined. In a separate mixing bowl, whisk together the flour and baking powder, then add it to the stand mixer bowl alternately with the whipping cream in 3 additions, and beat them together continuously until incorporated.

Step 2

Grease a cake pan with butter or nonstick cooking spray, then dust it with flour, and tap away the excess. Pour the batter into the prepared pan, then spread it nicely and evenly, and bake it in the preheated oven at 325°F for about 80 minutes or until a toothpick inserted in the middle comes out clean. Once done baking, let the cake cool down for at least 20 to 30 minutes, then unmold it upside down on a wire rack, and let it cool completely. Now, prepare the glaze, place a skillet pan on a stove over medium-high heat, then add the butter, and let it melt. Add the sugar to the hot and melted butter, then change the heat setting to low, and start to whisk them together until completely melted.

Step 3

Slowly pour the evaporated milk into the caramelized sugar while stirring continuously, then let it cook for about 5 to 8 minutes or until thickened, and add some salt to taste if needed. Whisk in the vanilla extract, then turn off the heat, and transfer the glaze to a glass cup or bowl. Let the glaze cool down while toasting the pecan and butter together over 400°F for about 4 minutes, then pour the glaze over the cooled cake, and top it with the toasted pecan. Allow the glaze to set for at least 10 minutes, then serve, and enjoy!
