One of my all-time favorite desserts is a delicious peanut brittle that you can make with only about 7 ingredients and 2 easy steps! My go-to recipe whenever I crave a sweet treat is this recipe by Amy Lynn’s Kitchen on YouTube. You should give it a try and then see for yourself.
Step 1
Grease the baking sheet with a generous amount of butter and set it aside. In a 2-quart Pyrex or a microwave-safe dish, add the raw shelled peanuts, sugar, light corn syrup, and salt, then stir them all together until well combined and uniform, and place it on the microwave to melt on a high setting for about 5 minutes. Carefully remove the hot dish from the microwave, then add the butter and vanilla extract, and stir them together until well combined and incorporated.

Step 2
Put it back in the microwave to cook for an additional 2 minutes or more until the mixture becomes a light brown color. Once the mixture is to the desired consistency and doneness, remove it from the microwave and add the baking soda, then stir them together quickly until light and foamy. Pour the mixture immediately into the prepared and butter baking sheet, then spread it evenly into a thin layer, and let it cool until it becomes solid. Break it into pieces, then serve, and enjoy or store it in an air-tight container.
