Ingredients:

  • 2 lb chicken breasts (halved)
  • salt and pepper (to taste)
  • 3 cups shredded Mexican cheese (divided)
  • 1 cup sour cream
  • 14 oz diced green chillis (two 7 oz cans, with their juice)

Toppings:

  • 1 small avocado (diced)
  • 1 Roma tomato (diced)
  • cilantro (chopped)

Directions:

Step 1

Preheat your oven to 400 degrees F and butter your casserole dish. Next, cut your chicken breasts in half. Season your sliced chicken breasts on both sides with salt and pepper to taste. After this, place a large pan over medium heat and add 2 tbsp of oil. Once the oil is hot, add the chicken in batches and cook for about three minutes per side or until golden and cooked through. Arranged your sauteed chicken in the buttered casserole so they’re laying flat and overlapping as little as possible.

Step 2

Now, for the sauce, in a medium bowl, add 14 oz of diced green chillis with their juice. Next, add 2 cups of shredded Mexican cheese and 1 cup of full-fat sour cream. Mix it all together until well combined. After this, pour and spread the sauce nicely and evenly over the chicken, then sprinkle the top with 1 cup of shredded Mexican cheese. Place it in the preheated oven at 400 degrees F and bake for 15 minutes or until the cheese is melted. After 15 minutes, remove it from the oven and top it with diced avocado, Roma tomato, and cilantro generously.
