Ingredients:

  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 large onion, finely chopped
  • 2 large carrots, finely chopped
  • celery stalks, finely chopped
  • garlic cloves, chopped
  • 4 ounces of bacon, chopped
  • 1 pound of ground beef
  • 1 pound of ground pork
  • Salt, to taste or as needed
  • Freshly ground black pepper, to taste or as needed
  • 1 cup of dry white wine
  • 1 (28-ounce) can of peeled San Marzano tomatoes, hand crushed
  • 1 cup whole milk
  • ½ tsp freshly grated nutmeg
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • ½ cup freshly chopped parsley

Directions:

Step 1

Chop the veggies and bacon, and then set them aside. Place a Dutch oven on a stove over medium-high heat, then melt the butter, and add the onions. Give them a good toss and saute for a few seconds before adding in the carrots and celery, then continue to saute them for a few more seconds, add the garlic, and cook them until fragrant.

Step 2

Season them with some salt and pepper to taste, then transfer the cooked veggies to a bowl, and set them aside. In the same Dutch oven, cook the bacon until nice and crispy, then transfer them to the bowl of cooked veggies leaving the rendered oil to the pan, and then add the ground beef and pork to the Dutch oven.

Step 3

Break them apart and cook them until nice and brown, then put the cooked veggies and bacon back into the pot including the juices, and give them a good mix. Pour in the white wine, then continue to mix them, and allow them to cook for about 3 to 4 minutes until reduced. Add the tomatoes and nutmeg, then mix them well, season them with salt and pepper to taste, and keep mixing to combine. Pour in the milk, then give them a good stir, and bring them to a boil.

Step 4

Once boiling, set it down to a simmer, then put the lid on the pot, and allow them to cook for about 3 to 4 hours. Remove the lid then stir in the heavy cream until incorporated, add the parmesan cheese, and continue to stir until combined. Taste and adjust the flavor to your preference, then turn the heat down and mix in the parsley. Turn off the heat and serve the meat sauce over cooked pasta. Enjoy!
