This meatloaf potato casserole is in itself a whole meal already. It has flavorful ground beef as the base and then topped with mashed potatoes along with other toppings that make it extra special! This is a great recipe idea that can feed the whole family and I’m sure that they will give you lots of compliments when you serve this to the table.

Step 1
In a large bowl, add the ground beef, beaten egg, ketchup, BBQ sauce, mustard, onion, bell pepper, and cracker crumbs, then season them with salt, pepper, onion powder, and garlic powder to taste, and mix everything until fully combined.
Step 2
Transfer the meat mixture to a cast-iron skillet, then shape it in the middle, and place it in an oven preheated at 350°F. Allow it to bake for at least an hour or until cooked through, then while waiting, prepare your mashed potatoes, and once the meatloaf is done baking, remove all of the excess grease.
Step 3
Put the mashed potatoes on top and shape it nicely, then sprinkle the French-fried onion followed by the bacon pieces and shredded cheese, and put the meatloaf back in the oven to broil for about 10 to 15 more minutes. Serve and enjoy!
