The one thing that keeps many of us from eating as healthily as we would like to is time. Time plays a huge role in the decisions we make on all levels and we’ve all had very noble intentions with a clear resolve to eat more healthy and make better choices, only to let it all fly out the window because we have let ourselves get too hungry and we go into the kitchen grasping for the first thing we see. There is an answer, it’s called meal prepping, and follow along because you are not going to believe how easy and simple meal prepping can make your life. The first idea is the salad in a jar, you can get a case of Mason Jars from Michael’s Craft Store or use any recycled jars you have been saving, these can be stored in the fridge for the entire week and I guarantee you won’t be running into the kitchen starving to death grabbing chips and crackers. The salads in a jar are also excellent to take to work.
Directions are simple, you just layer these ingredients into your jars, starting with the dressing first, then when you are ready to eat it you just shake it up the dressing goes all over the delicious salad! Amazing!
Then there is this awesome egg frittata idea to make little English muffin sandwiches. You can make variations of these for all sorts of individual’s particular tastes and store in the fridge or freezer until you are ready to microwave and eat.
Then here’s a really great one, the Pesto Chicken with fresh green beans and cherry tomatoes. Seriously, microwave these for lunch or dinner and they will be way better that a store-bought version full of chemical preservatives.
These are all so delicious, I’m plotting out my healthy eating regimen as I write this and it’s going to be easy healthy and glorious.
