I love recipes made by Grandmothers because they are often very delicious and never fail to amaze me every time. One of my favorite recipes to follow is this one by Faye Thompson on YouTube because it’s super easy and quick to prepare, plus, it’s so delicious and rich in chocolatey and nutty goodness. Surely, both kids and adults alike will enjoy this cake up to the last bite.

Ingredients:

Cake

  • 2 sticks of butter
  • 3 tbsp of cocoa powder
  • 1 cup of Coca-Cola
  • 2 cups of sugar
  • ¼ cup of buttermilk
  • eggs
  • 1 tsp of baking soda
  • 1 tsp of vanilla extract
  • 1½ cups of mini marshmallows

Icing

  • 1 stick of butter
  • 3 tbsp of cocoa powder
  • 6 tbsp of Coca-Cola
  • 1 (16-ounce) box of powdered sugar
  • 1 cup of chopped pecans

Directions:

Step 1

Add the butter, cocoa powder, and Coca-Cola in a saucepan, then place it on a stove over medium-high heat, and bring it to a boil until completely melted. In a mixing bowl, add the flour, salt, sugar, and baking soda, then give them a good whisk to combine, add the whisked eggs followed by the buttermilk, chocolate mixture, and vanilla extract. Beat them all together until well combined and incorporated, then add the marshmallows, and fold them together until evenly combined.

Step 2

Generously grease a baking dish with butter or nonstick cooking spray, dust it with flour, and pour in the cake batter. Place it in a preheated oven at 350°F, then allow it to bake for about 45 to 50 minutes, and while waiting for the cake to bake, prepare the icing. Place a clean saucepan on a stove over medium-high heat, then add the butter, cocoa powder, and Coca-Cola, then bring them to a boil, and allow them to melt completely.

Step 3

In another bowl, add the powdered sugar, then pour in the hot chocolate mixture, and beat them together starting at a low speed until incorporated. Add the chopped pecans, then fold them together until evenly distributed, then adjust the thickness to your liking by adding 1 to 2 tablespoons of water, and then spread it over the hot cake evenly. Freeze the cake or serve it immediately, and enjoy!
