Are you a big fan of mashed potatoes? I have a recipe for you! These mashed potato puffs I found on Youtube from TheCooknShare are simply delightful. It’s also super easy to prepare, and the ingredients are flexible enough to change with what’s available to you. These will make a good side dish and replacement for traditional mashed potatoes.
Ingredients:
- 3 cups mashed potatoes
- 2 large eggs, beaten
- 1 cup cheddar cheese, shredded
- 1/4 cup bacon bits
- 2 tbsp of chives, chopped
- ground black pepper (to taste)
- salt (to taste)
- 2 tbsp of parmesan cheese, powdered or shredded
Directions:
Step 1
Add the 3 cups of mashed potatoes to a mixing bowl followed by 2 eggs. Mix together well. Next, add 1 cup of shredded cheese, 1/4 cup of bacon bits, 2 tbsp of chopped chives, 2 tbsp of parmesan cheese, salt, and black pepper. Mix together until well combined.

Step 2
Grease your muffin pan with some baking spray and scooped up the mixture and place it in each cup. Smoothen out the top with the back of a spoon. Bake in the oven at 400 degrees F for 25 to 30 minutes. After baking, let them cool a bit before removing them from the pan.
