Ingredients for Mashed Potato Candy:

  • ½ cup of plain mashed potatoes
  • ½ cup of salted butter, softened
  • 6 to 7 cups of powdered sugar, plus more for dusting
  • 2 tsp of vanilla extract
  • Creamy peanut butter, for filling

How to Make Mashed Potato Candy:

Step 1

In a large mixing bowl, add the mashed potatoes, butter, and 1 cup of sugar, then beat them until combined, and then add the remaining sugar one cup at a time while beating continuously until incorporated.

Step 2

Once the dough is moldable, add the vanilla extract, then give it a good mix, and put it in the refrigerator to chill for at least 30 to 60 minutes. After chilling the dough, divide it into two, and place one on a surface dusted with powdered sugar.

Step 3

Roll the dough into a rectangle that’s about ¼ inch thick, then spread the peanut butter over it evenly making sure to leave a small space around the edges, and start rolling the dough over into a log.

Step 4

Using a sharp knife, start cutting the log dough into ¼ to ½ inch thick pieces, then repeat the same steps for the remaining half log dough. Serve and enjoy! You can store the leftover candies in an airtight container in the fridge for up to a week.
