Ingredients:

  • 3 large potatoes
  • 4 strips fried of bacon, chopped
  • 2 tbsp of butter, unsalted
  • 2-3 tbsp of milk
  • Salt and pepper, to taste
  • 1 tsp of garlic
  • 3 green onions, chopped
  • 1 cup of cheese
  • 1 cup of all-purpose flour
  • 2 eggs, beaten
  • 2 cups of Italian bread crumbs
  • Oil, for frying

Directions:

Step 1

Peel off the skin and wash the potatoes well, then place them in a large pot filled with water, and boil them until fork tender. Remove the potatoes from the water and drain off the excess, put them in a large mixing bowl, then mash them for a bit before adding in the butter, milk, salt, pepper, and garlic. Mash them until they are well combined. Add in the green onions, bacon, and cheese, then using a flat spatula or spoon, mix them all together until well combined. Transfer and add this mixture to 9*13 inches baking pan, then spread them out smoothly and evenly. Place some parchment paper on top, then smooth it out again.

Step 2

Place the mixture in the fridge and leave it for about 30 minutes to set. After 30 minutes, take the mixture out of the fridge, and peel off the parchment paper. Using a ring mold or a cup, press and cut out round shapes from the mixture, or simply slice them into squares. Prepare 3 separate bows and fill them with flour, beaten egg, and bread crumbs separately. Dredge each potato cake in that order, then set them aside. Heat some oil in a large pan up to 350°F or 180°C, then start frying each potato cake in batches until both sides are golden brown. Serve them topped or paired with sour cream and chopped green onions.
