Ingredients:

  • boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1 tbsp chicken bouillon base
  • 4 tbsp fresh basil
  • 1/2 cup fresh Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp pepper flakes
  • 1 tsp unsalted butter
  • 2 garlic cloves
  • salt and pepper, to taste
  • 1 tsp slap your mama seasoning
  • 1/2 tsp lemon pepper
  • 1 tsp chili powder
  • 1 tsp dried parsley
  • 1 tsp paprika
  • 1/2 cup all-purpose flour
  • 4 oz sun-dried tomatoes
  • 1/2 small onion, chopped
  • 3 tbsp of oil (from the sun-dried tomatoes)

Directions:

Step 1

Slice the chicken breasts right in the middle, cover them with plastic wrap, then gently smash them with a meat tenderizer. After this, drizzle some olive oil on both sides, rub it in, then season with the seasoning mixture (1 tsp slap your mama seasoning, 1 tsp paprika, 1 tsp chili powder, 1 tsp dried parsley, and 1/2 tsp lemon pepper). Next, pour 1/2 cup all-purpose flour into a flat plate, then lightly coat the chicken with it. After this, sear the chicken on both sides for three to four minutes.

Step 2

Once done, remove the chicken and set them aside. In the same skillet, melt 1 tbsp butter, then saute the onions until softened. Next, add the minced garlic and sun-dried tomatoes. Stir around, then simmer for about 30 seconds. After this, add 1 cup of heavy cream and 1 tbsp chicken bouillon base. Season with 1/2 tsp pepper flakes, 1 tsp Italian seasoning, and salt and pepper to taste. Mix everything well to combine, then add 1/2 cup of shredded Parmesan cheese. Put the chicken back into the pan and allow everything to simmer for three to five minutes or until the sauce started to thicken. Garnish with 4 tbsp freshly chopped basil.
