Ingredients:

  • 10 pounds of leg ham
  • 30 cloves
  • 2 oranges, cut into quarters
  • 1 cup of water

Maple Glaze

  • ¾ cup of maple syrup
  • ¾ cup of brown sugar, packed
  • 3 tbsp of dijon mustard
  • ¾ tsp of ground cinnamon
  • ½ tsp of allspice or nutmeg

Step 1

Take the ham out of the fridge and let it sit at room temperature for about an hour, then preheat your oven to 160°C or 320°F, and arrange the shelf in the lower third position so that the ham will be at the center of the oven. When the ham is almost ready, prepare the glaze, in a mixing bowl, add the maple syrup, brown sugar, Dijon mustard, ground cinnamon, and allspice or nutmeg, then mix them all together until well combined and uniform, and set it aside. Remove the skin of the ham as shown in the video, then score or lightly cut crisscross lines all over the top of the ham, and insert cloves in each intersection.

Step 2

Place the ham in a large baking dish, then squeeze the orange over the top, and place the squeezed quarters around the ham. Brush or spoon half of the glaze all over the ham and into each cut, then pour water into the baking dish and put it inside the preheated oven. Let the ham bake for about 1½-2 hours, then baste it with the remaining glaze and juices in the baking dish every 30 minutes. Once nicely caramelized and golden, allow it to rest for 20 minutes or more, then serve, and enjoy!
