Ingredients:

  • 7 egg whites
  • 1 tsp vinegar
  • ¾ cup sugar
  • 1¾ cup all-purpose flour
  • ¾ cup sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 7 egg yolks
  • ½ cup oil
  • 2/3 cup water
  • 1 tsp vanilla

Mango Whipped Cream Frosting

  • 1 cup cream cheese
  • 2 cups whipping cream
  • ¼ cup icing sugar
  • 1 cup mango puree
  • 1 tsp vanilla
  • Freshly sliced mango

Directions:

Step 1

In a large mixing bowl, add the flour, sugar, baking powder, and salt, then whisk them together before adding the egg yolks, oil, water, and vanilla, and then continue to whisk until well combined. In a separate bowl, whip the egg whites and vinegar until nice and frothy, then add the sugar, and continue to whip until medium-stiff peaks form. Fold in the meringue into the yolk mixture in three batches, then divide the batter between two 8-inch pans lined with parchment paper evenly, and tap lightly to remove air trapped inside the batter. Bake them in a preheated oven at 180°C or 356°F for about 25 to 30 minutes, and while waiting prepare the frosting.

Step 2

In a separate mixing bowl, beat together the cream cheese, whipping cream, mango puree, sugar, and vanilla making sure to mix well in between each addition, then continue to mix until smooth and well combined, and set it aside. Once the cakes are done baking, cut them through in half, then start stacking them into layers making sure to spread frosting in between each cake, and use some of the remaining frostings to cover the top and sides of the cake. Transfer the leftover to a piping bag, then start piping decorations along the edges of the top and around the sides at the bottom of the cake, and garnish the center with freshly sliced mangoes.
