I have been a fan of boxed mac and cheese because they are super convenient and easy to make, especially during busy days or when I don’t feel like preparing my own food. I’ve always thought that they could be made in only one way and have never explored other ways of cooking it until I saw this recipe by Delish on YouTube.

These mac and cheese bombs are so good and delicious, and they are the perfect dish to make for an appetizer that you can serve for parties or cookouts, too! You can also adjust the seasonings to your preference especially if you love your food a little bit spicy.

Ingredients for Mac & Cheese Bombs:

  • 1 box of macaroni and cheese, plus ingredients listed on the box
  • 1½ cups of Monterey Jack cheese, shredded
  • 1½ cups of Cheddar cheese, shredded
  • ¼ tsp of cayenne pepper
  • 2 cups of all-purpose flour
  • Kosher salt
  • Freshly ground black pepper
  • 2 large eggs, lightly beaten
  • 1 tbsp of milk
  • 2 cups of panko breadcrumbs
  • Freshly chopped parsley, for garnish
  • Vegetable oil, for frying

Step 1

Prepare the macaroni and cheese according to the package instructions, then add the cheddar cheese, Monterey Jack cheese, and cayenne pepper, and give them a good stir to combine until the cheese has melted. Transfer the mac and cheese to a large bowl, then wrap it with plastic, and place it in the fridge to chill for about 3 hours until firm.

Step 2

In a small bowl, whisk together the flour, salt, and pepper, then mix the eggs and milk in another bowl, and in the final bowl, put the breadcrumbs. Scoop the macaroni and cheese mixture with a small ice cream scooper, toss the scooped ball into the flour mixture to coat, and dip it in the egg mixture until covered.

Step 3

Dredge the ball in the breadcrumbs, then place them on a baking sheet, and put them in the refrigerator to chill until ready to fry. Place a large and heavy pot on a stove over medium heat, then add about 1″ of vegetable oil, and heat it until shimmering and it reaches a temperature of 350°F.

Step 4

Add about 4-5 mac and cheese balls, then cook them for about 2 minutes per side until golden brown, and place them in a wire rack to drain off the excess oil. Sprinkle some salt, then continue to cook the remaining mac and cheese bombs, and serve them garnished with parsley while still warm. Enjoy!
