Ingredients:

  • 4 very large Russet potatoes
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cloves garlic, minced
  • 1½ cups whole milk, at room temperature
  • ½ cup heavy whipping cream, at room temperature
  • 3 ounces cream cheese, at room temperature
  • 10 to 12 oz mozzarella cheese, divided, use ½ cup for the sauce
  • 8 to 10 oz sharp cheddar cheese, divided, use ½ cup for the sauce
  • Salt
  • Ground or cracked black pepper
  • Cayenne red pepper
  • Green onions, for garnish
  • Pork or turkey bacon, for garnish

Directions:

Step 1

Preheat your oven to 350°F, then peel off the skin of the potatoes, and place them in a large bowl filled with water to prevent them from browning. Place a pan on a stove over medium heat, then melt the unsalted butter, and add the minced garlic. Give them a good stir and saute for just about under a minute, then gradually pour the flour while whisking continuously until well combined, and cook it for about 2 minutes or until the flour taste is gone. Add the whole milk and heavy cream, then stir them together until combined, and cook them for about 3.5 to 4 minutes or until it has thickened.

Step 2

Reduce the heat to low, then add the cream cheese, mozzarella cheese, and sharp cheddar cheese, then stir them all together until melted, and season it with pepper, cayenne, and salt. Give them a good stir, then taste and adjust if needed, and cover the pan with a lid. Turn off the heat, then remove the pan from the stove, and set it aside to rest. Grease a casserole dish with butter, then pat the potatoes dry, and start slicing them thinly. Drop the sliced potatoes down the prepared cheese sauce, then gently stir them together until combined, and season them with some more pepper, cayenne, and salt to taste.

Step 3

Transfer some of the potatoes to the prepared casserole dish, then sprinkle a layer of cheese on top, and repeat the layers with the remaining potatoes, cheese sauce, and cheese. Cover the casserole tightly with aluminum foil, then bake it in the preheated oven for about 35 minutes covered, and once the potatoes are fork tender, remove the cover and let them bake for 15 more minutes or until the cheese is nice and brown. Garnish it with some chopped green onions and bacon, then allow it to rest for about 15 minutes, and serve. Enjoy!
