When it comes to dinner, I always choose only the best and easiest recipes that I could find, and one of my favorites is this loaded casserole dish by RecipeTin Eats on YouTube. What I love about this is that it’s shareable and can feed a crowd, perfect for family mealtime. Plus, this is also very simple to prepare and you can never mess it up because it will come out perfect every time. Ingredients:

  • 2.5 pounds of potatoes
  • 2/3 cup of milk, full or low fat
  • ¾ cup of thickened cream or heavy cream
  • 1/3 cup of mayonnaise or ¼ cup cream
  • 1½ tsp of fresh thyme leaves or 1 tsp dried, plus more for garnish
  • 2 large cloves of garlic, minced
  • ¾ tsp of salt
  • Black pepper, to taste
  • 2 cups of shredded cheese
  • 1 cup of shredded mozzarella cheese, or other kind of cheese, for topping

Directions:

Step 1

Preheat your oven to 180°C or 350°F, then clean and peel the potatoes, and cut them into small cubed pieces. Place the potato cubes in a large mixing bowl, then add the milk, thickened cream, mayonnaise, fresh thyme leaves, minced garlic, salt, pepper, and shredded cheese, and mix them all together until well combined. Grease a 9×3 inches baking dish with nonstick cooking spray or melted butter, then pour the potato mixture in, and spread it evenly.

Step 2

Cover the dish with aluminum foil, then place it in the preheated oven, and allow it to bake for about 60 minutes or until the potatoes are tender. Remove the foil, then sprinkle the mozzarella cheese all over the top, then put it back in the oven, and let it bake for about 25 more minutes or until the cheese is golden. Once done baking, remove it from the oven, then allow it to rest for about 5 to 10 minutes, and garnish with more thyme leaves if desired. Serve and enjoy!
