Step 1
In a large heat-proof bowl, add the egg yolks and sugar, then place it over a pot filled with simmering water, and make sure that the bottom of the bowl is not touching the water. Whisk them together until the sugar has dissolved and the custard’s consistency has thickened, then once the temperature reaches 154-158ºF or 68-70ºC, remove the bowl from heat, and let it cool down. Once the mixture has been slightly chilled, add the mascarpone, then beat them together until well combined and smooth, and add the lemon zest, lemon juice, and vanilla bean paste. Give them a good mix until fully combined and smooth, then set the mixture aside. In a separate mixing bowl, add the cold heavy cream, then beat it until stiff peaks form, and fold in 1/3 of the whipped cream to the mascarpone mixture to combine before adding and folding the remaining whipped cream until combined, set it aside.

Step 2
In a small mixing bowl, mix together the lemon juice, milk, and limoncello, then dip each ladyfinger for about 1 to 2 seconds, and lay the soaked ladyfingers in the bottom of a medium-sized baking dish. You can break some of them if needed so that they can all fill the spaces in the dish. Next, spread half of the cream over the soaked ladyfingers, then add another layer of ladyfingers, and spread the remaining cream at the top. Cover the dish with plastic wrap, then put it in the refrigerator, and leave it for at least 6 hours up to overnight. Once ready to serve, grate some lemon zest and garnish it on top of the tiramisu, then slice, serve, and enjoy!
