This easy lemon garlic shrimp pasta recipe by Sip and Feast is a simple and quick dish you can make on busy days. It has the right amount of citrus, rich garlic taste, and wonderful flavor from the olive oil that ties it all together. If you don’t like cream-based or tomato-based pasta, this one is for you. Clean and dry the shrimp, then place them in a bowl. Add 1/2 teaspoon of baking soda, 1/2 teaspoon of kosher salt, 1/4 teaspoon of black pepper, and 1/2 teaspoon of crushed red pepper. Mix until all are fully seasoned. Set aside.
Cook the pasta based on the package instructions until al dente in salted water (2 tablespoons of kosher salt per gallon of water). Reserve at least 1 cup of pasta water for later.
Place a large pan over medium heat and add 1/4 cup of olive oil. Saute the shrimp for about 4 minutes or until firm and pink. Once done, remove the shrimp and set aside tented with foil. In the same pan, saute the garlic for 3 minutes until lightly golden.
Pour 1/2 cup of the reserved pasta water into the pan. Next, add the butter and the al dente pasta. Toss well so the pasta will absorb the sauce for about 1 minute. Add the shrimp, parsley, lemon juice, and lemon zest. Mix again.
Turn off the heat and taste the pasta. Add more seasonings: salt, pepper, and crushed red pepper if needed. If it’s dry, you can add more pasta water. Serve with a drizzle of extra virgin olive oil and lemon wedges on the side. Enjoy!
