We can all agree that ice cream is one of the best desserts for summer and it tastes good no matter the flavor! But, personally, I prefer popsicle ice creams more than those in tubs because I find them more fun and easier to consume since they usually come in small sizes. I have tried making homemade ice cream before but not a popsicle version which is why I got so excited when I found this video tutorial by M. Patisserie on YouTube and learned that it was super easy to make than I initially thought. I tried making my own version of this ice cream at home and added more cheese for a fun and tasty twist.
Step 1
In a large mixing bowl, add the cream cheese and sugar, then break and fold them together until well mixed, and set it aside. In a tall measuring cup, add the egg yolks, milk, sugar, and rice flour, then emulsify them together until uniform and well combined, and then pour it into a saucepan. Zest the lemon over the mixture, then place the saucepan on a stove over medium heat, and whisk it continuously until thickened. Remove it from the heat, then sift it over the cream cheese mixture, and whisk them together until smooth and incorporated.

Step 2
Cover the bowl, then place it in the refrigerator, and allow it to chill for about 2 hours. In a separate bowl, beat the whipping cream until soft peaks form, then take the yolk mixture out of the fridge, and give it a quick mix before adding all of the whipped cream into it. Gently fold them together, then transfer them to a piping bag or Ziploc bag, and pipe them onto the ice cream mold. Put them back in the refrigerator, then allow them to freeze for at least 12 hours, and unmold them once ready. Serve and enjoy!
