Lemon is my favorite fruit and flavor in pastries, and one of my go-to recipes is this one by Emma’s Goodies on YouTube. This cake is so flavorful, and buttery, and every bite literally just melts in your mouth that you just wouldn’t want to stop eating it.

Ingredients for Lemon Cake:

Cake

  • 1 stick of butter, at room temperature
  • ½ cup of white granulated sugar
  • Zest of lemons
  • 2 medium eggs, at room temperature
  • 1/3 cup of 0% fat Greek yogurt, at room temperature
  • ¼ cup of whole milk, at room temperature
  • 3 tbsp of fresh lemon juice
  • 1 cup + 2 tbsp of all-purpose flour
  • 2 tsp of baking powder
  • ¼ tsp of salt

Frosting

  • ½ cup of heavy cream, cold
  • Grated zest of lemon
  • 5.5oz of Philadelphia cream cheese, cold
  • 2oz of powdered sugar
  • 1 tsp of vanilla extract

How to Make a Lemon Cake:

Step 1

Preheat your oven to 320°F or 160°C, then grease a 7-inch square baking pan with butter, dust it with flour, and line it with parchment paper with an overhang on the sides. In a large bowl, add the softened butter, sugar, and lemon zest, and beat them until creamy and combined. Add the eggs, then keep mixing until incorporated, add the yogurt, milk, lemon juice, flour, baking powder, and salt, and continue to mix until combined.

Step 2

Scrape the bottom and sides, then transfer the batter to the prepared pan, and spread it evenly. Place it in the preheated oven, then let it bake for about 25 minutes or until a toothpick inserted at the center comes out clean, and allow it to cool in the pan for about 5 minutes. Turn it over to a wire rack, then let it cool completely, and prepare the frosting while waiting for it to cool.

Step 3

In a large bowl, add the heavy cream and lemon zest, then give them a good mix, cover the bowl, and put it in the fridge to chill for at least 20 minutes. In another bowl, beat the cold cream cheese until creamy, then add the powdered sugar, and strain the cream mixture. Mix them until well combined, then spread it over the cooled cake, and serve. Enjoy!
