Ingredients:

  • 2/3 cup sugar
  • 1/2 cup butter
  • 2/3 cup white chocolate
  • 1 1/3 cups flour
  • 2 eggs
  • zest of a lemon
  • a pinch of salt
  • 1 tbsp lemon juice

Lemon Glaze:

  • 1 cup icing sugar
  • 3 tbsp lemon juice
  • zest (for dusting)

Directions:

Step 1

In a mixing bowl, add 1/2 cup butter and 2/3 cup white chocolate. Melt them in a double boiler (or microwave), then mix well. Set aside. Next, combine 2/3 cup sugar and the zest of a lemon in another bowl, and mix them well together until incorporated. After this, add two eggs and whisk. Now, stir in the butter and chocolate mixture and continue whisking until combined. Next, add 1 1/3 cups flour, a pinch of salt, and 1 tbsp lemon juice. Mix together until smooth, then pour the batter into a square mold pan.

Step 2

Tap the mold pan a few times to remove air bubbles, then place the cake in a 325 degrees F oven. Bake for 25 minutes. After baking, let it cool for a few minutes. In the meantime, make the glaze. Combine 1 cup icing sugar and 3 tbsp lemon juice in a mixing bowl and whisk until smooth. Now, remove the cake from the mold and spread the glaze all over the top. Dust the top with some lemon zest, then cut the it into evenly sized squares. Serve and enjoy!
