This delicious chiffon cake recipe by MoLaLa Cook on YouTube comes in fun sizes and is filled with oozing and creamy custard. They are so soft, fluffy, and tasty, that you can eat them every day! Plus, you can serve them on any occasion or even on a normal day, and pair them with your favorite drink.

Ingredients:

Cake

  • 40ml or about 3 tbsp of milk
  • 30ml or 2 tbsp of corn oil
  • 55g or ½ cup of cake flour
  • 3 egg yolks
  • 3 egg whites
  • A pinch of salt
  • 1g or ¼ tsp of lemon juice
  • 45g or 3½ tbsp of sugar

Custard

  • 2 egg yolks
  • 25g or 2 tbsp of sugar
  • 6g or 2½ tsp of cornstarch
  • 5g or 1¾ tsp of cake flour
  • 170ml or about 1 cup of milk
  • 10g or 2 tsp of butter
  • 70ml or about 5 tbsp of whipping cream

Directions:

Step 1

In a large mixing bowl, add the milk and corn oil, then beat them until frothy, sift in the flour, add the egg yolks, and whisk them all together until well combined and smooth. Sift them again using a fine sieve, then set them aside. In a separate mixing bowl with egg whites, add the lemon and salt, then incorporate the sugar gradually while beating them until stiff peaks form. Fold the white egg mixture into the yolk mixture until well combined, then transfer to a piping bag, and squeeze into the mini cake mold leaving enough headspace. Bake them in a preheated oven at 130°C or 266°F for about 50 minutes, then another 15 minutes at 150°C or 302°F, prepare the custard while waiting for the cake to bake.

Step 2

In a pot, add the egg yolk, sugar, corn flour, and flour, then stir them together to combine before adding the milk, and let it cook over low heat until thick. Once thickened, add the butter and stir before pouring it into a mixing bowl, wrap it with plastic, then refrigerate for about an hour. Once the cake is done baking, poke holes at the center of each piece, then let cool, and unmold. Beat the whipping cream until smooth, then grab the chilled custard and lightly beat before adding them to the whipped cream and folding them together until well combined. Transfer the custard to a piping bag, then fill each cake with custard, serve, and enjoy!
