Ingredients:

For the chocolate cake (you’ll need to make this twice to make two layers)

  • 4 large eggs
  • 2 cups of self-raising flour
  • 1⅕ cup of caster sugar
  • 1 cup of softened butter
  • 1½ tsp of baking powder
  • ½ cup of cocoa powder
  • 2-3 tsp of boiling water

For the filling and cover

  • 10 ounces of double cream
  • 3 tbsp of icing or powdered sugar
  • Cherry jam
  • 9 cups of white mini marshmallows
  • Black fondant icing
  • White fondant icing
  • Decorative white candy balls

Directions:

Step 1

In a large mixing bowl, add the beaten eggs, flour, sugar, butter, and baking powder, then mix them together until they are well combined, smooth, and pale in color. Add cocoa powder to a separate mixing bowl, then pour boiling water into it, give it a good stir until combined, and turns into a paste. Add this mixture into the batter and combine. Split the mixture into two 9-inch cake pans, then bake them in a preheated oven at 325°F for about 30 minutes or until a toothpick inserted in the center comes out clean. Leave it to cool completely, then repeat this recipe to complete all 4 layers of cake. For the sweet cream filling, combine the double cream and icing sugar in a mixing bowl, then beat them together until it thickens.

Step 2

Stack 3 layers and carve them into a dome shape, then cut the remaining layers into 4, and stack 2 quarters on top of one another. Carve one into a ball shape, rounding the edges, and the other into a rough eggplant shape. Fill the cake with layers of cream and cherry jam to suit and cover the whole outer edge of the face with cream, then cover the face with black fondant icing cake, and place it back on the cake. Using the cream, stick down the head and face on top of the cake, then cover the sides of the cake and head with cream. Add in the mini marshmallows all over where there is cream. Cut2 white circles of fondant then cut 2 smaller circles out of black fondant. Place the black circles inside the white and glue them in using water. Stick a white candy ball into rach pupil, then make 2 indents on the nose using a cake decorating tool.
