Ingredients for Landslide Skillet Casserole:
- 1 pound of medium ground beef
- 1 large potato, sliced thinly
- ½ onion, chopped
- 3 cloves of garlic, chopped
- 1 large carrot, grated
- 1 bell pepper, diced
- 1 (10 oz) can of sweet corn
- 1 (14 oz) can of Italian diced tomatoes
- 1-2 tbsp of Worcestershire sauce
- 2 tsp of ground black pepper
- 1 tsp of salt
- 2 tsp of Italian seasoning
- ¼ tsp of hot pepper flakes
- 2 cups of old sharp cheddar cheese
- 2 tbsp of freshly chopped parsley, for garnish
How to Make Landslide Skillet Casserole:
Step 1
Place a pan on a stove over medium-high heat, then heat some oil, and add the ground beef. Break it apart, then cook it until nice and brown, and drain off any excess oil.
Step 2
Push the beef to one side of the pan, then in the empty spot, add the onion and garlic, and saute them until translucent and fragrant. Mix them together, then level out the beef to the pan, and add the potatoes evenly on top.
Step 3
Sprinkle the grated carrots, bell pepper, and corn, then pour in the broth, and add the tomatoes making sure everything is spread evenly.
Step 4
Season them with Worcestershire sauce, salt, pepper, Italian seasoning, and hot pepper flakes, then cover the pan with the lid, and heat the mixture to medium-low.
Step 5
Allow it to cook for about 20 to 25 minutes or until the potatoes are cooked through and fork tender, then remove the lid, and add the cheese on top. Put the lid back on, then let it simmer until melted, and garnish with parsley. Serve and enjoy!
