You no longer have to go to KFC to get their famous popcorn chicken as you can now make it at home with this recipe by table diary 식탁일기. I was so amazed that it has the exact flavors. Plus, the texture is super crispy! It was so addicting – we finished it in just one sitting.
For the coating:
Slice chicken breasts into small pieces and hit them with the back of a knife. Transfer to a bowl. Add 1 1/2 teaspoons of salt, 1 teaspoon of sugar, 1 teaspoon of red pepper powder, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1/2 teaspoon of pepper, and 1 egg. Mix until well combined. Cover it with a lid or cling wrap and place in the refrigerator for 2 hours.
In a different bowl, add the flour, cornstarch, 1 teaspoon of red pepper, 1 teaspoon of salt, 1 teaspoon of garlic powder, and 1 teaspoon of onion powder. Mix until well combined.
Pour a generous amount of oil into a pan and place over heat.
Pour cold water into an empty bowl. Take some chicken cubes, coat them with the flour mixture, then sift well using a sifter. Soak in cold water while still in the sieve and shake to remove excess. Coat again with the flour mixture and shake off excess.
The coating should look cracked, then immediately put into the hot oil. Cook for 2 minutes and don’t touch it. After 2 minutes cook it for a little bit more until crispy and golden brown.
