Ingredients
- 2 chicken breasts
- 1.5 teaspoons of salt
- 1 teaspoon of sugar
- 1 teaspoon of chili powder
- 1 teaspoon of onion powder
- 1/2 teaspoon of pepper
- 1 egg
For the coating:
- 1/2 cup and 6 tablespoons of cake flour or all-purpose flour
- 7 1/3 tablespoons of cornstarch
- 1 teaspoon of salt
- 1 teaspoon of chili powder
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder

Instructions
Step 1:
Slice chicken breasts into small pieces and hit them with the back of a knife. Transfer to a bowl. Add 1 1/2 teaspoons of salt, 1 teaspoon of sugar, 1 teaspoon of red pepper powder, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1/2 teaspoon of pepper, and 1 egg. Mix until well combined. Cover it with a lid or cling wrap and place in the refrigerator for 2 hours.
Step 2:
In a different bowl, add the flour, cornstarch, 1 teaspoon of red pepper, 1 teaspoon of salt, 1 teaspoon of garlic powder, and 1 teaspoon of onion powder. Mix until well combined.
Step 3:
Pour a generous amount of oil into a pan and place over heat.
Step 4:
Pour cold water into an empty bowl. Take some chicken cubes, coat them with the flour mixture, then sift well using a sifter. Soak in cold water while still in the sieve and shake to remove excess. Coat again with the flour mixture and shake off excess.
Step 5:
The coating should look cracked, then immediately put into the hot oil. Cook for 2 minutes and don’t touch it. After 2 minutes cook it for a little bit more until crispy and golden brown.
